Autumn Skies and Apple Pies

A new view of a big beautiful sky.
This is when you get up on a Sunday morning and the first thing you do is bake pies.  There is something comforting in making something you know will be enjoyed.  I like the process.  The wonderful smells coming from the oven, and then getting to eat the results.

 Since these are Dutch Apple pies with a crumb topping, I started by making the topping.
 The pastry cutter is very old but does the job.

 This little tool is awesome and saves plenty of time.  Mom used to peel each apple with a paring knife, then cut the apple into slices.  I never used a peeler until recently, always did it just like Mom.  
 I used granny smith, gala and smitten apples.  
 Colorful peelings.
 I put the slices into a bowl of cold water with a teaspoon or two of fruit fresh.  Then I drain the apples and put them into a dry bowl.
 Sugar, flour and a few pats of butter...don't forget the cinnamon, a dash of nutmeg and a pinch of salt.
 then the topping.
 Fifty minutes in a 400 degree oven...
 and deliciousness.
 Someone was very happy.
